Lebkuchen Chocolate Corners

Ingredients
- 125 g honey
- 60 g sugar
- 50 g butter
- 250 g flour
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 0.5 tsp cloves powder
- 1 tsp anise powder
- 1 pinch salt
- 1 tsp Baking Soda
- 1 tsp ammonium carbonate
- 1 tbsp milk
- 50 g candied orange peel
- dark couverture chocolate
- white couverture chocolate

Heat honey with sugar and butter, dissolve the sugar, then let it cool slightly. Dissolve the baking soda and ammonium carbonate separately in the milk. Mix the sifted flour and spices together and stir into the honey mixture along with the leavening agents. Finely chop the candied orange peel and fold into the dough. Refrigerate overnight.

The next day, fill small round molds (10 cm diameter) to about 1.5 cm height with the dough and bake in a preheated oven at 180°C for approximately 15-18 minutes. Remove from the oven and let cool before unmolding.

Melt the dark and white chocolate separately in a double boiler. While still warm, cut the baked Lebkuchen into 8-12 pieces and dip each piece into either the white or dark chocolate. Let them dry. Then fill small freezer bags with the remaining chocolate, cut tiny corners from each bag, and spray simple patterns onto the corners using the opposite chocolate.
