Chocolate Pear Cake with Powdered Sugar

Ingredients
- 1 lemon (unprocessed)
- 0.5 cinnamon stick
- 2 tbsp sugar
- 5 small pears
- margarine (for the pan)
- flour (for the pan)
- 100 g dark chocolate (vegan)
- 1 tbsp orange juice
- 200 g sugar
- 100 g fine brown sugar
- 1 Tbsp vanilla sugar
- 200 g Flour
- 50 g cornstarch
- 60 g cocoa powder
- 3 tsp baking powder
- 150 ml rapeseed oil
- 200 ml rice drink (rice milk)
- powdered sugar (for dusting)

Bring about 400 ml water with grated lemon zest, squeezed lemon juice, cinnamon stick and sugar to a boil for the pears. Peel, halve and core the pears. Add them to the liquid and simmer until soft, about 5 minutes. Remove the fruit, drain and let cool.

Preheat the oven to 170°C (fan). Grease the cake pan with margarine and dust it with flour.

Grate the chocolate finely. In a bowl mix the sugar, brown sugar, vanilla sugar, flour, cornstarch, cocoa powder and baking powder. Whisk together the oil and rice drink, then add the dry ingredients and stir well. Add enough water (up to about 80 ml) until the batter is smooth but not too liquid. Fold in the chocolate and pour into the pan. Smooth the surface and arrange the pears on top, pressing them slightly.

Bake for about 40 minutes; cover with foil during the second half if desired. Remove from oven, cool, cut into pieces and dust with powdered sugar before serving.
