Chocolate Pear Cake

Ingredients
- 4 pears
- 1 tbsp Lemon Juice
- 200 g dark chocolate (70% cocoa)
- 200 g butter
- 8 eggs
- 150 g raw cane sugar
- 200 g Whole Wheat Flour
- 150 g type 405 wheat flour
- 3 tbsp strong‑deveined cocoa powder
- 2 tsp Baking powder
- 0.5 tsp ground cinnamon
- 4 tbsp apple jelly

Peel the pears, quarter them, remove the core and dice. Toss with lemon juice and set aside.

Coarsely chop the chocolate and melt it with butter in a saucepan over low heat. Beat the eggs with sugar until creamy for about 5 minutes. Mix the flours with cocoa powder, baking powder, and cinnamon. Quickly fold the slightly cooled chocolate‑butter mixture into the egg batter.

Spread the batter onto a parchment‑lined baking sheet. Arrange the pears on top and bake in a preheated oven at 175 °C (155 °C fan; gas: level 2–3) for about 35 minutes. Remove, spread warm apple jelly over the cake, let it cool slightly, then cut into pieces and serve.
