Ingredients

  • 6 pears
  • 50 ml lemon juice
  • 100 g dark chocolate
  • 4 eggs
  • 100 g whole cane sugar
  • 200 g softened butter
  • 250 g ground almonds
  • 250 g wheat flour type 1050
  • 0.5 sachet baking powder
  • 100 ml milk (1.5% fat)
  • 2 tbsp cocoa powder
  • 50 g chocolate shavings

Instructions

  1. 1.

Peel, wash, core the pears and cut into wedges; drizzle with lemon juice.

  2. 2.

Chop the chocolate finely. Whisk the eggs with sugar and butter until frothy. Gradually add almonds, flour, baking powder and milk. Stir in the chocolate and cocoa powder. Add a little more milk if the batter is too thick.

  3. 3.

Line a baking tray with parchment paper, pour the batter onto it, smooth the surface and evenly top with pear wedges. Bake the chocolate pear cake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 50–60 minutes, checking with a skewer.

  4. 4.

Remove the cake from the oven, let it cool, cut into pieces and serve garnished with chocolate shavings.
