Chocolate Mousse with Fruits
Chocolate mousse with fruits from Spoonsparrow: kiwi, orange, pineapple and pomegranate accompany the classic French dessert perfectly!
Ingredients
- 200 g dark chocolate couverture
- 2 very fresh egg yolks
- 20 ml rum
- 200 ml whipping cream
- 2 Kiwis
- 1 orange
- 200 g pineapple
- 1 Pomegranate
- 50 g dark chocolate couverture
- 4 tsp oatmeal flakes
- mint (for garnish)

Coarsely chop the chocolate and melt it over a hot water bath while stirring. Remove from heat and let cool slightly. Place egg yolks in a metal bowl and whisk them into a creamy consistency over the water bath. Take off the heat again and fold in the melted chocolate, refining with rum.

Whip the cream until just soft peaks form. Quickly fold in half of it, then gently fold in the remaining cream. Pour the chocolate mousse into a shallow dish and chill for at least 3 hours.

Before serving, peel and halve the kiwis, cutting them into pieces. Peel the orange so that all white pith is removed; cut out the fruit segments between the membranes. Dice the pineapple into small cubes. Halve the pomegranate and use a spoon to release the seeds. Mix all fruits together.

Spoon one mound of chocolate mousse onto each plate and arrange the mixed fruits around it. Melt the remaining chocolate over a water bath and drizzle it over the mousse with a fork. Sprinkle about 1 tsp of oat flakes on top and garnish with mint leaves. Serve the chocolate mousse with fruits.
