Ingredients

  • 150 g soft butter
  • 150 g sugar
  • 1 packet Bourbon vanilla sugar
  • 1 egg
  • 1 pinch salt
  • 0.5 untreated lemon (zest)
  • 300 g flour
  • 0.5 tsp Baking powder
  • 1 egg yolk
  • 50 g chopped pistachios
  • 150 g dark chocolate couverture

    Whisk butter or margarine with sugar, vanilla sugar, egg, salt and lemon zest until very fluffy. Sift flour with baking powder over the mixture, fold in partially, then knead the rest underneath. Wrap in foil and chill for 2 hours. On a floured surface roll dough to 5 mm thickness and cut into triangles about 5 cm on each side using a cookie cutter. Place cookies at a distance on parchment‑lined baking sheet, press almond halves crosswise gently onto them. Whisk egg yolk with 1 tbsp water, brush cookies, bake on the middle rack of preheated oven at 200°C for about 10-15 minutes until golden yellow. Cool on a wire rack. Melt chocolate over a double boiler and dip cookies, sprinkle pistachios, let set.
