Ingredients

  • 2 Eggs
  • 75 g sugar
  • 50 ml plant oil
  • 100 g melted dark chocolate
  • 250 g flour
  • 2 tsp Baking powder
  • 0.5 tsp Baking soda
  • 1 pinch salt
  • 2 tbsp cocoa powder
  • 10 ml rum
  • 100 g milk chocolate
  • 400 g mascarpone
  • 2 packets vanilla sugar
  • 200 ml whipping cream

Instructions

    Preheat the oven to 180°C (356°F) with fan and top heat. Place paper liners into the muffin tin cavities.

    Beat the eggs with sugar and plant oil. Stir in the melted chocolate. In a bowl, mix flour with baking powder, baking soda, pinch of salt, and cocoa powder. Sift this over the egg mixture and fold in, adding rum as you go. Fill the batter halfway into the paper liners. Bake the cupcakes on the middle rack for 20-25 minutes (test with a toothpick). Carefully lift the muffins from the tin and cool them on a wire rack.

    Chop the milk chocolate and melt it over a hot, non-boiling water bath. Remove from heat and let cool.

    Whisk mascarpone with vanilla sugar, whip the cream to stiff peaks, and fold in. Fill a piping bag with a small tip and pipe the mixture onto the cupcakes. Place the melted chocolate in a freezer bag, cut a tiny corner, and use it to decorate the cupcakes. Let dry and serve.
