Ingredients

  • 200 g soft butter
  • 100 g powdered sugar
  • 3 egg yolks
  • 1 packet vanilla sugar
  • 1 tbsp orange juice
  • 1 tsp grated orange zest
  • 225 g flour
  • 3 tbsp cocoa powder
  • 1 tsp instant coffee powder
  • 100 g marzipan paste
  • 2 tbsp orange marmalade
  • 50 g white couverture chocolate
  • Chocolate bean (ready-made)
  • flour (for working)

Instructions

    Beat butter with powdered sugar until fluffy. Stir in egg yolks, vanilla sugar, orange juice and zest. Mix flour, cocoa and coffee powder. Quickly knead the mixture into a smooth dough, wrap in cling film and refrigerate for about 30 minutes.

    Roll out the dough on a floured surface to about 3 mm thickness. Cut round or oval cookies (about 4 cm diameter) and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (middle rack) for about 10 minutes. Remove from the sheet and let cool.

    Chop marzipan paste and mix with orange marmalade. Brush half of the cookies with this mixture and assemble with the unbrushed ones. For decoration, chop couverture chocolate into small pieces and melt in a double boiler. Fill a piping bag with a fine tip and pipe delicate lines onto the cookies. Decorate with chocolate beans.
