Chocolate Cake with Fruits

Ingredients
- 2 pomegranates
- 200 g Raspberries
- soft butter (for the pan)
- 200 g dark chocolate couverture
- 200 g butter
- 175 g sugar
- 4 eggs
- 60 g sour cream
- 200 g oat flour
- 1 tsp Baking powder
- 150 ml whipping cream
- mint (for garnish)
- powdered sugar (for dusting)
Instructions

Halve the pomegranates and use a spoon to remove the seeds. Rinse the raspberries and pat dry. Set aside about half of each.

Preheat the oven to 180°C with upper and lower heat. Butter the baking pan.

Coarsely chop the chocolate and melt it with butter over a double boiler. Let cool slightly. Beat sugar and eggs until creamy, then gradually fold in the cooled chocolate. Stir in sour cream. Sift flour over the mixture and whisk in baking powder. Fold in raspberries and pomegranate seeds, pour batter into pan, smooth top, bake for about 40 minutes (test with a skewer).

Remove cake from oven and let cool.

Whip cream to stiff peaks. Cut cake into pieces, place on bowls, dollop whipped cream over each, sprinkle remaining raspberries and pomegranate seeds. Garnish with mint and dust with powdered sugar.
