Chocolate and Date Tart

Ingredients

  • 6 Eggs
  • Pinch of salt
  • 200 g Nuts (e.g. almonds, hazelnuts, walnuts)
  • 150 g dried and pitted dates
  • 200 ml Almond drink (almond milk) or other nut milk (e.g. hazelnut milk) or water
  • 40 g Cocoa powder (3 heaped tablespoons)

Instructions

    Separate the eggs, beat the egg whites with a pinch of salt until stiff. Line the bottom of a springform pan with baking paper.

    Finely grind the nuts in a food processor or blender. Add the dates, egg yolks, nut milk and cocoa and puree everything into a creamy mass.

    Transfer the cocoa mixture to a bowl and fold in the egg whites. Fill the springform pan and bake in a preheated oven at 180 °C (top/bottom heat) for approx. 50 minutes.
