Ingredients
- 1 Mini cucumber (or 3.5 oz English cucumber)
- 1 tsp Sunflower seeds
- 3 Cherry tomatoes
- 2.6 oz Cream cheese (0.8% fat)
- Salt
- Pepper
- 2 sprigs Basil
Instructions

Wash the cucumber, pat dry, halve lengthwise and scoop out the seeds with a teaspoon.

Toast sunflower seeds in a non-stick pan without fat until light brown.

Wash tomatoes, quarter them, cut off the stem ends, and dice the flesh finely.

Mix cream cheese in a small bowl with sunflower seeds and diced tomatoes. Season with salt and pepper.

Wash basil, shake dry, pluck leaves and cut them into fine strips. Fill the cucumber halves with the tomato-cream cheese mixture, sprinkle with basil and serve.
