Chinese-Style Fondue

Ingredients

  • 200 g glass noodles
  • 200 g pak choi
  • 1 Chinese cabbage
  • 2 red bell peppers
  • 200 g shiitake mushrooms
  • 1 bunch scallions
  • 2 red hot chilies
  • 1.5 l vegetable broth

    Pour boiling water over the noodles and let them soak for 15 minutes. Drain, rinse with cold water, and set aside. Wash the pak choi and cabbage, removing stems from the leaves. Rinse bell peppers, halve them, remove seeds and white membranes, and cut into bite-sized pieces. Clean mushrooms and cut if desired.

    Trim scallions, wash, shake dry, slice green parts into rings and slash white parts multiple times. Wash chilies and slice into rings. Bring broth to a boil and place the fondue pot over a burner. Cook vegetables and noodles in the broth, then ladle out with a fondue sieve. Serve with grated ginger and soy sauce if desired.
