Chinese Dumpling with Ground Meat Filling

Ingredients
- 800 ml chicken broth
- 1 stalk lemongrass
- soy sauce
- fish sauce
- sweet-spicy chili sauce
- 500 g flour
- 1 tsp salt
- 1 tbsp oil
- 170 ml lukewarm water
- 1 onion
- 1 Garlic clove
- 350 g ground meat
- Salt
- ginger

Knead all dough ingredients together until firm and smooth. Wrap in plastic wrap and let rest covered for about 30 minutes.

Meanwhile, peel the garlic and onion, finely chop both. Mix with ground meat, add ginger, and season with a bit of soy sauce.

Form 16-20 small balls from the dough, roll each into thin circles on a floured board. Place about one tablespoon of filling in the center, fold into a half-moon shape, press edges together firmly, and optionally indent with a fork for patterning.

Bring broth to a boil with pressed lemongrass, a splash of soy sauce, fish sauce, and chili sauce.

Add dumplings and simmer for about 5-6 minutes. Remove lemongrass, taste, and serve.
