Chinese Cabbage Stew

A Chinese cabbage stew is a perfect after‑work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 1 onion
  • 300 g waxy potatoes
  • 300 g Chinese cabbage
  • 400 g chickpeas (canned)
  • 300 g peppercorn sausage (about 3 pieces)
  • 2 tbsp butter
  • 300 ml passata
  • 800 ml vegetable broth

Instructions

    Peel and wash the onions and potatoes, then cut both into small cubes. Clean and wash the cabbage, cutting it into thin strips. Rinse the chickpeas in a sieve and drain well. Slice the sausages into 1 cm thick rounds.

    Melt the butter in a pot and sauté the onion until translucent. Add the potatoes and brown briefly. Pour in the passata and add the broth. Simmer over medium heat for about 15 minutes.

    Add the chickpeas, cabbage and sausage, season with salt and pepper, and simmer for another 5 minutes. Taste the stew and serve immediately.
