Ingredients

  • 1 large Chinese cabbage
  • 2 ripe apples (e.g., Boskop)
  • 1 tbsp Lemon Juice
  • 80 g coarsely chopped walnuts
  • 300 g Camembert
  • 2 tbsp Apple cider vinegar
  • 4 tbsp Walnut oil
  • Salt
  • pepper from the mill

Instructions

    Separate the individual leaves from the cabbage, wash them, cut off the tough stems and slice the leaves into fine strips. Rinse briefly with hot water, drain, rinse cold and let dry well. Peel the apples, quarter them, remove cores, grate finely and immediately mix with 1 tbsp lemon juice. Roast the walnuts in a dry pan until golden brown and set aside.

    Preheat the oven grill.

    Slice the cheese, place on parchment paper on a baking tray and lightly melt under the preheated grill.

    Whisk together vinegar, oil, salt and pepper for the dressing. Toss the cabbage strips with apple shreds, divide into bowls, drizzle with dressing and top with cheese slices. Sprinkle walnuts over the top and optionally grind fresh black pepper to taste.
