Chili con Carne with Potatoes

Ingredients
- 2 onions
- 4 Garlic cloves
- 3 tbsp oil
- 500 g ground beef
- 1 tbsp Tomato Paste
- 1 red chili pepper (chopped)
- 0.5 tsp chili powder
- 0.5 tsp cumin
- 0.5 tsp Salt
- 300 ml beef broth
- 2 red bell peppers
- 4 tomatoes
- 300 g potatoes
- 1 tbsp fresh oregano (chopped)
Instructions

Peel and finely chop the onions and garlic. Heat oil in a pot and sauté the onions with garlic until translucent. Add the ground beef and cook until crumbly. Stir in tomato paste, chili pepper, and spices; cook briefly before adding broth.

Wash, halve, deseed, and roughly cube the bell peppers.

Wash the tomatoes, remove stems, and dice the flesh.

Peel and roughly cube the potatoes.

Add tomatoes and potatoes to the pot, cover, and simmer over low heat for about 30 minutes. Stir occasionally and add bell peppers during the last 10 minutes. Finish by seasoning the chili con carne with potatoes and sprinkle with oregano before serving.
