Chickpea Salad with Tomatoes, Beans, Onions and Mint

Ingredients

  • 250 g dried chickpeas
  • 400 g Green Beans
  • Salt
  • 4 tomatoes
  • 1 Red Onion
  • 4 tbsp white wine vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp Honey
  • 6 tbsp Olive oil
  • pepper (ground)
  • 2 tbsp chopped mint
  • 1 tbsp black sesame seeds

Instructions

    Soak the chickpeas overnight, then drain and simmer in a pot covered with water for about 40 minutes until tender. Drain, rinse under cold water and set aside.

    Wash, trim and cut the beans into halves or thirds depending on size. Blanch in salted water for about 8 minutes. Rinse and drain.

    Blanch tomatoes briefly, cool, peel, quarter, seed and chop into pieces. Peel the onion, halve it and slice thinly.

    Whisk vinegar with lemon juice, honey and oil to make the dressing. Season with salt and pepper.

    Combine all prepared salad ingredients with the dressing and distribute over bowls. Garnish with mint and sesame seeds before serving.
