Ingredients

  • 200 g sheep cheese
  • 100 g black olives
  • 400 g tortellini
  • juice of one lemon
  • 2 small red bell peppers (cut into cubes)
  • 2 Zucchini
  • Salt
  • ground pepper
  • 1 tsp thyme leaves
  • 1 tsp chopped rosemary needles
  • 1 tbsp chopped parsley
  • 1 tsp lemon zest
  • 6 tbsp Olive oil

Instructions

    Prepare the vegetables: wash the peppers, halve them, remove seeds and cut the flesh into cubes. Wash the zucchini, quarter lengthwise and cut into bite-sized pieces. Slice the olives.

    Sauté the pepper cubes and zucchini pieces in a hot pan with 2 tbsp olive oil for about 3-4 minutes, then set aside to cool.

    Mix remaining oil, lemon zest and juice, herbs, salt and pepper into a dressing; add the sautéed vegetables and let marinate.

    Cook the tortellini according to package instructions. Crumble the sheep cheese.

    Drain the tortellini and combine with the vegetables, mix well, season, and garnish with sheep cheese and olives. Serve warm.
