Chickpea Puree

Ingredients
- 250 g chickpeas
- 0.5 lemon (juice)
- 0.5 tsp paprika powder
- 2 Garlic cloves
- 1 bunch parsley (leaves)
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 100 g sesame seeds
- 1 small cucumber (sliced)
- 2 tbsp black olives
- olive oil (as desired)
- parsley (for garnish)
Instructions

Soak chickpeas in plenty of water overnight, then simmer with the soaking water for about 1 hour, remove from heat and let cool.

Drain the chickpeas.

Peel and roughly chop the garlic, then blend it with the chickpeas, lemon juice, paprika powder, sesame seeds, salt, pepper, 4 tbsp olive oil, and parsley leaves until a paste forms.

Arrange the chickpea puree on plates, press a shallow indentation in the center, pour olive oil into it if desired, and garnish with cucumber slices, parsley leaves, and olives before serving.
