Cold Vegetable Soup (Vegetarian)

The cold vegetable soup, vegetarian, from Spoonsparrow is always a welcome dish on hot summer days!
Ingredients
- 1 egg yolk
- 1 tsp Mustard
- 60 ml olive oil
- Salt
- Pepper
- 2 plum tomatoes
- 1 cucumber
- 1 red bell pepper
- 1 clove of garlic
- Pinch of cayenne pepper
- Chives
Instructions

Whisk the egg yolk with mustard, slowly add olive oil while stirring constantly until a creamy mayonnaise is formed. Season with salt and pepper.

Wash the tomatoes, remove the stems and dice them finely. Peel and dice the cucumber. Quarter, clean, rinse and dice the bell pepper. Peel and dice the garlic finely.

Place the diced vegetables with garlic and mayonnaise in a blender and puree. Strain the soup through a sieve, season with salt, pepper and cayenne pepper. Chill.

Cut the chives into fine rolls. Serve the soup garnished with chives and serve with hot bread.
