- 2 ready‑to‑cook chickens (about 900 g)
- 4 cloves garlic
- 1 tsp coarse sea salt
- 6 tbsp Olive oil
- 1 tsp Tabasco sauce
- 2 organic lemons (juice)
- 2 organic oranges (juice)
- 2 organic oranges (zest)
- 125 ml olive oil
- 2 tbsp lemon liqueur (e.g., Limoncello)
- 3 tbsp barbecue sauce
- 100 g black olives
- 200 g tomatoes
- 1 tbsp finely chopped parsley
- Salt
- black pepper (ground)

Cut each chicken into 8 pieces. Peel the garlic and press it into a bowl. Mix with salt, olive oil, and Tabasco sauce. Season the chicken pieces with salt and pepper, brush with the paste, cover and let sit for 1 hour. Place the chicken pieces on a preheated grill, grill for 20–25 minutes—depending on thickness—turning frequently. Place the thinner pieces on top of the rack so that the others can continue cooking.

Meanwhile, combine lemon juice, orange juice, orange zest, olive oil, liqueur, and barbecue sauce in a large shallow bowl; season with salt and pepper if desired. Add the olives. Blanch the tomatoes briefly, shock them in cold water, peel, quarter, remove stems and seeds, and dice the flesh. Toss the tomatoes and parsley into the marinade.

Place the hot grilled chicken pieces into the marinade and turn them in it. Arrange on plates and serve with tortilla chips and grilled tomatoes.
