Ingredients
- 1 whole chicken
- olive oil
- 1 bundle fresh mixed herbs (e.g., oregano, marjoram, rosemary)
- 3 untreated limes
- 4 untreated lemons
- 2 fresh garlic bulbs
- 1 tbsp honey
- Salt
- pepper (ground)

Wash and pat the chicken dry.

Halve a lime, squeeze half of it, slice the other half into rounds. Slice a lemon similarly and combine with lime slices, some olive oil, half the herbs, salt, and pepper. Use this mixture to stuff the chicken cavity and tie the legs together. Mix lime juice with honey, 1 tbsp oil, salt, and pepper; brush the chicken with it.

Halve remaining lemons and limes and arrange them on a baking sheet drizzled with oil. Cut garlic bulbs in half and add some herbs. Place the chicken on top, sprinkle remaining herbs, and bake in a preheated oven at 180°C for about 1 hour.
