Cured Ham Wrapped in Puff Pastry

Ingredients

  • 1 cured ham (or about 1 kg of Kassler)
  • Pepper
  • 500 g frozen puff pastry
  • 3 tbsp clarified butter
  • 1 egg
  • Salt
  • Pepper

Instructions

    Thaw the puff pastry according to package instructions. Wash and pat dry the ham, lightly salt and pepper it. Heat the clarified butter and sear the meat on all sides until crisp. Roll out the puff pastry on a floured surface into a rectangle.

    Cut strips from the rolled dough for garnish. Separate the egg; brush the edge of the pastry sheet with egg white. Place the meat in the center, wrap the pastry around it, and press the edges together. Rinse a baking tray cold, place the wrapped ham seam side down on the tray.

    Lay the dough strips over the pastry to form a lattice, brush everything with beaten yolk, and let rest for 20 minutes. Bake in an oven at 220 °C for 40 minutes, then let rest 10 minutes in the turned-off oven before slicing.
