Ingredients
- 4 chicken breast fillets
- 2 tbsp oil
- 500 g broccoli florets
- 1 Red Onion
- 2 Spring Onions
- 2 bell pepper slices
- 2 tbsp red curry paste
- 200 ml coconut milk
- 200 ml chicken broth
- 1 tbsp ginger
- soy sauce
- Salt
- Pepper
- 1 Lime

Wash and pat dry the chicken, then slice into strips.

Peel, halve, and cut the onion into strips.

Wash, trim, and slice spring onions into thin rings.

Wash, halve, trim, and slice bell peppers into strips.

Sauté onion, broccoli, and bell pepper in hot oil. Add curry paste and spring onions, cook briefly, then pour in coconut milk and chicken broth. Simmer for about 2-3 minutes. Stir in chicken and ginger, cooking with occasional stirring for about 8-10 minutes until cooked through. Halve the lime; cut one half into slices, squeeze the other half. Season sauce with lime juice, soy sauce, salt, and pepper, then serve on plates garnished with lime slices.
