Chicken Skewers with Figs and Couscous

Ingredients
- 700 g chicken breast fillet
- 1 onion
- 2 Garlic cloves
- 1 untreated lemon
- 5 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 1 tsp ground cumin
- 200 g dried soft figs
- 300 g Couscous
- fresh coriander leaves (for garnish)
Instructions

Preheat the oven to 200°C with upper and lower heat.

Wash the chicken, pat dry, and cut into about 3 cm cubes.

Peel the onion and garlic and dice finely. Wash the lemon hot, pat dry, grate zest from half of it and squeeze the juice. Slice the remaining half into rounds.

Place onion, garlic, 4 tbsp oil, zest, salt, pepper, and cumin in a shallow baking dish. Toss the chicken cubes in the mixture, then alternately skewer them with figs on wooden sticks. Return to the marinades, add lemon slices, and bake for about 20 minutes. Prepare couscous according to package instructions.

To serve, spread couscous on plates, place skewers on top, drizzle with remaining olive oil, and garnish with fresh coriander.
