Ingredients
- 2 chicken breast fillets
- 1 tbsp soy sauce
- 1 tsp curry powder
- 1 garlic clove (grated)
- 0.5 tsp cumin
- 1 tsp Honey
- 1 tbsp Peanut butter
- 1 tbsp sweet chili sauce
- 1 tbsp lime juice
- 2 tbsp sunflower oil
- 2 salad hearts (cut into strips)
- 2 tomatoes (cored)
- 1 shallot (sliced)
- 0.5 bunch flat-leaf parsley (chopped)
- 0.5 pomegranate
Instructions

Cut chicken breast fillets into bite-sized pieces, mix with soy sauce, curry powder, garlic, cumin and honey, and let marinate in the refrigerator for at least 1 hour (best overnight).

For the sauce whisk peanut butter with chili sauce, lime juice and 1 tbsp water.

Heat oil in a pan and cook chicken pieces over medium heat covered for 5 minutes. Then flip and cover for 3 more minutes, then turn off the stove.

Mix salad with tomatoes, shallots, parsley and pomegranate seeds and serve on two plates.

Distribute chicken over the salad and pour satay sauce on top.
