Ingredients

  • 500 g chicken breast fillet
  • 1 head romaine lettuce
  • 200 g cocktail tomatoes
  • 2 tbsp capers in salt
  • 6 slices white bread
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Apple cider vinegar
  • a pinch of sugar
  • 3 tbsp sunflower oil
  • 4 tbsp olive oil
  • Lemon

Instructions

    Wash and drain the romaine lettuce. Remove outer tough leaves and cut remaining leaves into large pieces. Wash tomatoes and halve them. Cut chicken breast into bite‑size cubes.

    Heat sunflower oil in a pan and sear chicken cubes until cooked through, seasoning with salt and pepper and drizzling lemon juice.

    Cut bread into cubes and toast in a dry pan over medium heat while turning, then rinse capers with cold water and drain.

    Make vinaigrette from vinegar, olive oil, salt, pepper, capers and sugar. Arrange lettuce, tomatoes, chicken cubes and croutons on four plates and drizzle each with vinaigrette.
