Ingredients

  • 300 g Basmati Wild Rice Mix
  • Salt
  • 4 chicken breast fillets (about 140 g each)
  • 2 tbsp peanut oil
  • 2 onions
  • 2 Garlic cloves
  • 2 tbsp Curry Powder
  • 200 ml coconut milk
  • 150 ml poultry broth
  • 2 tbsp Light soy sauce
  • chopped cashews
  • coriander leaves

Instructions

    Cook the rice according to package instructions in salted water.

    Peel and finely dice the onion and garlic. Rinse the chicken and pat dry. In a hot pan, brown the chicken all over in oil. Add onions and garlic, cook until golden. Stir in curry powder, pour in coconut milk and broth, deglaze. Simmer gently for about 10 minutes. Remove chicken from sauce, cube it, return to sauce, adjust thickness or add more broth if needed, season with soy sauce and salt. Mix in rice (drain if necessary) and serve in bowls.
