Asian Noodles with Fish

Ingredients
- 250 g Thai noodles
- 450 g cod fillet
- 25 g flour
- 1 tsp Thai curry paste
- 45 ml sunflower oil
- 1 red Thai chili pepper
- 100 g snow peas
- 150 g Carrots
- 100 g cocktail tomatoes
- 0.5 tsp lime zest (organic)
- 2 tbsp freshly chopped coriander
- 2 tbsp coconut flakes
- 2 tbsp peanuts

Place noodles in a bowl and pour boiling water over them, letting them sit for 5 minutes. Cut cod fillet into bite-sized pieces, brush with Thai curry paste, then coat in flour. Heat oil in a wok and fry the fish until crispy. Drain the fish and set aside. Deseed the chili pepper and slice into thin rings. Peel carrots and cut into rings. Halve cocktail tomatoes.

Add chili, carrots, and snow peas to the remaining oil and stir-fry for 2 minutes. Remove noodles from water and drain. Add noodles to the wok with vegetables and cook over high heat for 2-3 minutes. Add fish, cocktail tomatoes, grated zest, coriander, mix well with noodles, and continue cooking for another 2-3 minutes. Garnish with coconut flakes and peanuts, serve hot.
