Fischröllchen mit Safran und Apfelstücken

- 16 Schollenfilets (à ca. 50 g)
- Salz
- 2 kleine, rotschalige Äpfel (á ca. 100 g)
- 6 EL Schlagsahne
- 1 Döschen Safranfäden (0,1 g)
- 1 EL gehackte Dillspitzen
- 1 EL Zitronensaft
- Pfeffer (aus der Mühle)
- 1 EL Butter
- 200 ml trockener Weißwein
- 80 g crème fraîche
- Dillspitzen (zum Garnieren)

Wash and pat dry the Schollenfilets. Cut 4 fillets into small pieces, mix with 1 TL salt, cover and place in freezer for about 30 minutes.

Wash apples, quarter, core and slice finely into strips.

Warm 4 EL cream in a small pot and dissolve saffron strands in it. Process frozen fish fillets with remaining cream in an electric food processor to make a fine filling, then mix in dill, lemon juice, and saffron cream, lightly peppering.

Season remaining fillets, pepper, spread some fish filling on the skin side, roll from thick end. Heat butter in a pan, add rolls, pour wine over them. Cover and cook for 5-7 minutes. Remove rolls and keep warm. Stir crème fraîche into wine sauce, add apple strips and simmer 1-2 minutes. Plate fish rolls with sauce and apple slices, garnish with dill sprigs.
