Ingredients

  • 1 Chicken (ca. 1kg)
  • 1 can Coconut milk (unsweetened, 400 g)
  • 250 ml Water
  • 1 Onion
  • 2 Garlic cloves
  • 2 EL oil
  • Lemongrass
  • Ginger powder (½ tsp each)
  • Coriander powder (½ tsp each)
  • 1 tsp turmeric
  • 2 Lemon leaves
  • 250 g baby corn (canned)
  • 1 EL Butter

Instructions

    Cut the chicken into 8 pieces and season with salt and pepper.

    Thinly slice the onion and garlic. Heat oil, sauté onion and garlic until translucent. Add chicken pieces and brown them.

    Stir in ginger, coriander, and turmeric. Sauté everything for 3 minutes. Then add lemongrass and lemon leaves, pour in coconut milk mixture. Simmer the chicken for 20–25 minutes. Meanwhile, brown the baby corn in butter in a pan. Add the cooked corn to the finished chicken pieces and garnish with finely sliced lemon leaves before serving.
