Ingredients

  • 500 g carrots
  • 2 stalks leeks
  • 45 g butter
  • 3 chicken breast fillets
  • Salt
  • Pepper
  • 300 ml heavy cream
  • 100 ml milk
  • 100 g cream cheese
  • 1 tsp freshly grated nutmeg
  • 75 g shredded cheese

Instructions

  1. 1.

Peel the carrots and slice them. Clean, wash, and chop the leeks. Blanch the carrots and leeks separately in boiling water for 5 minutes; drain.

  2. 2.

Melt 30 g butter in a pan. Sear the chicken breast fillets around all sides over high heat until they develop a golden brown color. Slice the fillets into rounds.

  3. 3.

Preheat the oven to 150 °C (gas setting 5). Grease a baking dish with the remaining butter.

  4. 4.

Arrange the leeks in the dish, then layer the sliced chicken and cover with carrot slices—season each layer with salt and pepper.

  5. 5.

Whisk together the cream, milk, cream cheese, and nutmeg; pour evenly over the gratin. Bake for 20 minutes. Sprinkle shredded cheese on top and bake another 15 minutes until golden. Remove from oven and serve immediately.
