Ingredients

  • 160 g fine bulgur
  • 300 ml classic vegetable broth
  • 100 g Onions (2 onions)
  • 2 tbsp Rapeseed oil
  • 15 g mild ajvar (2 tsp)
  • 1 tsp ground cumin
  • Salt
  • Pepper
  • 2 Eggs
  • 1 tsp Sweet paprika powder
  • 300 g chicken mince

Instructions

  1. 1.

Place the bulgur in a large bowl. Bring the broth to a boil, pour it over the bulgur, cover and let soak for 30 minutes.

  2. 2.

Meanwhile, peel and finely chop the onions.

  3. 3.

Heat the oil in a pan and sauté the onions until translucent.

  4. 4.

Add them to the bulgur. Season with ajvar, cumin, salt, and pepper. Mix well and allow to cool slightly.

  5. 5.

In a second bowl, whisk the eggs with the paprika powder.

  6. 6.

Add the chicken mince to the bulgur mixture and knead thoroughly with a hand mixer’s dough hooks.

  7. 7.

Line a baking tray with parchment paper. With damp hands, form small balls from the mixture and place them on the tray. Bake in a preheated oven at 180 °C (160 °C fan‑forced, gas: level 2–3) on the middle rack for about 10 minutes. Then turn on the grill and broil for another 5–7 minutes.
