Lentil Bulgur

A hearty lentil and bulgur dish flavored with cardamom, coriander, cumin, and pistachios. The coarse wheat grain has been a staple food for centuries.
Ingredients
- 2 tbsp olive oil
- 1 tsp cumin
- 2 tsp coriander seeds
- 2 cardamom pods
- 50 g red lentils
- 225 ml vegetable broth
- 100 g bulgur
- 20 g pistachio kernels
Instructions

Heat the oil in a pot. Add cumin, coriander seeds, and cardamom and sauté over medium heat for 1 minute.

Add the lentils and stir, sautéing another minute.

Pour in the vegetable broth, bring to a boil, then simmer for 1 minute.

Stir in the bulgur and bring back to a boil. Turn off the heat, cover, and let the bulgur absorb liquid for 25 minutes.

Meanwhile, chop the pistachio kernels and lightly toast them in a dry pan without oil.

Fluff the lentil bulgur with a fork, transfer to a bowl, sprinkle with toasted pistachios, and serve.
