Ingredients
- 700 g spinach
- 4 chicken breast fillets
- 30 g ginger
- 1 chili pepper
- Salt
- Pepper
- 3 tbsp oil
- 60 ml soy sauce
- 250 ml broth
- 1 tbsp Cornstarch

Wash, trim, rinse, drain and roughly chop the spinach; wash the meat, pat dry, slice into thin strips. Peel and finely dice the ginger. Deseed and chop the chili pepper. Season the meat with salt and pepper. In hot oil fry for about 5 minutes, then remove.

Add ginger, chili and spinach to the pan fat, stir and steam for about 4 minutes. Season with salt and pepper. Return the meat. Whisk soy sauce, broth and cornstarch together. Pour in, bring to a boil and thicken. Taste again and serve.
