Chicken Breast with Mushrooms, Asparagus and Spring Onions

- 500 g asparagus
- 4 chicken breast fillets (about 140 g each)
- 400 g Mushrooms
- 6 Spring Onions
- 3 tbsp olive oil
- Salt
- pepper (ground)
- 80 g grated cheese (e.g., Parmesan)
- 2 tbsp chives

Peel the asparagus and steam it for about 15 minutes until just tender. Cool in ice water and cut into 3-4 cm pieces.

Preheat the oven to 220°C (428°F) with both fan and top heating.

Wash, pat dry and cut the chicken breasts into pieces. Clean the mushrooms and halve or quarter them depending on size. Wash the spring onions, trim and slice diagonally into rings. Arrange the asparagus, chicken and mushrooms on a baking sheet lined with parchment paper and spread evenly. Drizzle with olive oil and season with salt and pepper.

Bake in the oven for about 10 minutes. Mix everything well and sprinkle with Parmesan and spring onions. Bake another 5-10 minutes until golden brown. Serve in portion bowls if desired, topped with chives.
