Zucchini Patties

Ingredients
- 250 g waxy potatoes
- 250 g carrots
- 3 zucchini (≈150 g each)
- 3 stalks fresh dill
- 0.5 bunch Chives
- 2 Eggs
- 100 g flour
- 2 tbsp potato starch
- Salt
- freshly ground pepper
- 0.5 tsp nutmeg
- 3 tbsp vegetable oil
- 100 g grated Gouda
Instructions

Wash, peel, and grate the potatoes and carrots coarsely. Wash the zucchini, halve them, scrape out the seeds with a teaspoon, and grate coarsely as well.

Wash the dill and chives, shake dry, and finely chop.

Combine the grated zucchini with the pressed potato-carrot mixture, eggs, flour, starch, and herbs; season with salt, pepper, and nutmeg.

Heat oil in a pan, drop spoonfuls of the batter into it, flatten them, and fry 3‑5 minutes until golden brown. Flip and cook another 3‑5 minutes on the other side.

Remove the patties, place them on parchment paper on a baking sheet, sprinkle with cheese, and bake for 5‑10 minutes to gratinate.

Take out and serve on a preheated plate.
