Chicken Breast with Fruity Paprika Vegetables

Ingredients
- 4 chicken breast fillets
- 2 tbsp lemon juice
- 250 ml apple juice
- 1 small pineapple
- 1 large onion
- paprika (one red and one yellow)
- Salt
- Pepper (freshly ground)
- 2 tbsp clarified butter
- 4 Tbsp breadcrumbs
- 0.5 tsp Curry Powder
- 2 tbsp crème fraîche
- 1 tbsp heavy cream
- 5 tbsp finely grated Emmental cheese
- chopped chives for garnish
Instructions

Whisk lemon juice and apple juice together and marinate the chicken breast fillets in it for about 1 hour.

Peel the pineapple thoroughly, quarter it, remove the core, and cut into small pieces.

Wash, trim, halve, seed, and finely chop the paprika.

Peel the onion, split lengthwise, and slice into strips.

Remove the chicken from the marinate, pat dry, season with salt and pepper, and sear in hot clarified butter for 1–2 minutes per side; set aside.

Add pineapple, onions, and paprika to the pan, sauté, season with salt and pepper, transfer to a greased baking dish, and place the meat on top.

Mix breadcrumbs with crème fraîche, cheese, cream, curry powder, salt, and pepper, then spread over the meat.

Pour 1 cup of the remaining marinate into the dish and bake in a preheated oven at 200°C for about 20 minutes.
