Ingredients

  • 4 chicken breast fillets
  • olive oil
  • 2 minced garlic cloves
  • juice of one lemon
  • 1 tbsp thyme leaves (fresh or dried)
  • 1 finely chopped chili pepper
  • Salt
  • ground black pepper
  • 8 medium sweet potatoes
  • aluminum foil

Instructions

    Wash and pat dry the chicken breast fillets. Whisk together 4 tbsp olive oil, garlic, lemon juice, thyme, chili, salt, and pepper to make a marinade. Drizzle the fillets with the marinade and cover; refrigerate overnight.

    Wash (and optionally brush) the sweet potatoes, dry them, and wrap each in aluminum foil. Bake in a preheated oven at 200°C for about 50 minutes until tender.

    Drain the chicken fillets and grill them over hot charcoal, turning frequently to achieve a golden brown crust on all sides. Brush with remaining marinade during grilling.
