The Chia Pudding with Papaya from Spoonsparrow can be prepared ahead – for less stress in the morning.

Ingredients

  • 500 ml soy drink (soy milk) or cashew drink
  • 40 g coconut flakes
  • 100 g chia seeds
  • 600 g papaya (1 papaya)
  • 50 g macadamia nuts
  • 30 g pistachio kernels (2 tbsp)
  • 1 tbsp apple syrup

Instructions

    Stir the plant-based drink with coconut flakes and chia seeds, then let it sit in the refrigerator for about 30 minutes, stirring occasionally.

    Meanwhile, peel, halve, pit, and cut the papaya into small pieces. Roughly chop the macadamia nuts and pistachios.

    Sweeten the chia pudding with apple syrup and divide it among four bowls. Garnish with papaya pieces, macadamia nuts, and pistachios.
