Chia pudding almond yogurt parfait with warm cranberries from Spoonsparrow is great as a vegan breakfast or dessert!
Ingredients
- 2 tbsp Chia seeds
- 1 pinch cinnamon
- 1 pinch Vanilla powder
- 250 ml almond drink (almond milk) or another plant-based milk
- 125 g fresh cranberries
- 1 Orange (juice)
- 2 tsp maple syrup
- 2 tbsp almond yogurt
Instructions

Stir the chia seeds with cinnamon and vanilla into the almond milk. Let everything soak for about 20 minutes until the pudding has a fine creamy consistency and is not too liquid. (Prepare the chia pudding the night before.)

Meanwhile, put the cranberries in a pot and simmer them over medium heat with the juice of one orange until they soften. Season the warm cranberries with 2 teaspoons of maple syrup.

Add two tablespoons of almond yogurt on top of the chia pudding and distribute the warm cranberries over it.
