Chestnut Soup with Apples and Walnuts

- 2 shallots
- 400 g chestnuts (pre-cooked, vacuum-packed)
- 2 tsp Rapeseed Oil
- 900 ml vegetable broth
- 80 g walnut kernels
- 2 red apples
- 1 tbsp honey
- 100 g cooking cream
- Salt
- Pepper

Peel and finely dice the shallots. Roughly chop the chestnuts. Heat 1 tsp oil in a pot. Sauté the shallot cubes over medium heat for 3 minutes.

Add the chestnuts and cook together for 2 minutes. Then pour in the vegetable broth and let everything simmer gently for about 10 minutes.

Meanwhile, toast the walnuts in a hot pan without fat over medium heat for 3 minutes. Wash the apples, quarter them, core them, and cut into thin slices.

Heat the remaining oil in the pan. Sauté the apple slices and honey over medium heat for 5 minutes.

Add the cream to the soup and blend until smooth. Season with salt and pepper, then serve in four bowls topped with caramelized apple slices and roasted walnuts.
