Ingredients
- 400 g Salmon fillet
- 4 Spring Onions
- 2 Tomatoes
- 150 g crème fraîche
- 1 tsp horseradish (jarred)
- 1 tsp lemon juice
- Salt
- Cayenne pepper

Rinse the salmon and steam it for about 8 minutes. Then break it into flakes and let it cool. Wash, trim, and slice the spring onions into thin rings. Blanch the tomatoes, shock them in cold water, peel, quarter, seed, and dice finely. Whisk the crème fraîche with the horseradish until smooth, then season with lemon juice, salt, and cayenne pepper. Combine the salmon, spring onions, and tomatoes, tasting as you go.
