Cherry Tart

Ingredients
- 150 g flour
- 110 g butter
- 50 g sugar
- 1 egg
- 1 pinch salt
- 2 tbsp cocoa powder
- dried beans (for blind baking)
- 150 g Yogurt (3.5% fat)
- 250 g Quark (40% fat)
- 3 eggs
- 1 Vanilla bean
- 100 g sugar
- 150 g sweet cherries (fresh or pitted and drained from the jar)
Instructions

Knead flour, butter, sugar, egg, salt and cocoa into a shortcrust dough, wrap in foil and chill for 30 minutes.

Pit the cherries and cut them into small pieces (catch the juice).

Whisk yogurt, quark, eggs, vanilla bean pulp and sugar together. Fold in the cherry pieces with juice.

Roll out the dough and place it in a tart pan. Raise a rim. Prick slightly with a fork. Cover the bottom completely with beans and bake in a hot oven (convection 180°C) for 15 minutes. Remove, fill with cherry mixture and smooth the surface. Return to the oven and bake for another 25-30 minutes.

Let cool, cut into pieces and serve garnished with cherries.
