Cherry Sorbet

- 700 g sweet cherries
- 100 g sugar
- 1 tbsp Lemon Juice
- 3 egg whites

Wash the cherries, set aside about one handful for garnish, pit the rest and chop finely. Combine with sugar, lemon juice and approximately 80 ml water; bring to a boil. Simmer gently for about 10 minutes, strain through a sieve and pass the cherries. Capture the juice and allow it to cool completely.

Whisk the egg whites until stiff peaks form and fold in the cherry juice. Pour the sorbet mixture into a shallow metal bowl, cover, and place in the freezer for at least 3 hours. Stir with a fork every 30 minutes to prevent large crystals from forming.

For serving, scoop out balls and garnish with the remaining cherries.
