Cherry Ice

Ingredients

  • 400 g sour cherries
  • 50 ml Cherry Juice
  • 2 tbsp fruit sugar
  • 1 tsp cinnamon
  • 500 ml soy drink (soy milk) (with vanilla flavor)
  • 0.5 tsp grated untreated lemon zest

    Wash and pit the cherries. Mix cherries with cherry juice and fruit sugar in a pot and steam over low heat for 5 minutes. Add cinnamon. Puree the cherries together with the juice finely and let cool. Stir the cherry puree, soy drink and lemon zest together.

    Process the mixture in an ice cream maker according to the manufacturer’s instructions for 40–45 minutes until creamy, or pour into a metal bowl and freeze for 3–4 hours, stirring vigorously with a whisk every 20–30 minutes. Serve garnished with fresh cherries.
