Ingredients
- 600 g cherries
- 40 ml cherry brandy
- 1 untreated orange
- 250 ml red wine
- 40 ml white port wine
- 60 g sugar
- 1 cinnamon stick
- 200 g ricotta
- 1 EL sugar
- 0.5 untreated lemon (grated zest)
- vanilla bean seeds

Wash the orange hot and with a sharp knife thinly cut some pieces of peel. Squeeze out the juice. Pit the cherries and marinate them with cherry brandy and orange juice for about 30 minutes. Reduce wine, port wine, sugar and cinnamon to a syrup under high heat. Add the marinated cherries with soaking liquid to the sauce and poach for 2-3 minutes.

Whisk together ricotta, sugar, lemon zest and vanilla seeds.
