Cheesecake with Mandarins and Meringue

Ingredients
- 300 g flour
- 2 tsp Baking powder
- 100 g sugar
- 1 packet vanilla sugar
- 100 g butter
- 2 Eggs
- 3 cans clementines
- 1 kg low-fat quark
- 175 g sugar
- 2 packets vanilla sugar
- 6 egg yolks
- 3 packets cream pudding powder
- 200 ml whipping cream
- 1 lemon (zest and juice)
- 400 ml milk
- 200 g sugar
- 6 egg whites
Instructions

For the crust, knead all ingredients into a smooth dough and wrap in foil. Chill for about 60 minutes. Drain the mandarines.

Then mix all filling ingredients except the mandarines with an electric mixer until combined, let sit briefly.

Grease a deep baking pan well, spread the dough on it, and prickle with a fork several times. Distribute the drained mandarines over the crust and spread the filling evenly, smoothing the top.

Bake the cake in a preheated oven at 180°C for about 40-50 minutes. In the meantime, beat the egg whites to stiff peaks and gradually add sugar while continuing to beat.

Fill a piping bag with a round tip with the meringue mixture, remove the cake from the oven, pipe the meringue in waves over the top, and bake for an additional 10-15 minutes.

Let the cake cool in a closed oven overnight so that the little droplets form. Slice and serve.
