Cheesecake in a Glass
The Spoonsparrow cheesecake in a glass – a healthy dessert perfect for take‑out!
Ingredients
- 1 Organic lemon
- 50 g walnut kernels
- 30 g dried dates (4 dried dates)
- 50 g coconut oil (3 Tbsp)
- 80 g rolled oats
- 300 g low‑fat quark
- 100 g cream cheese
- 30 g Honey (2 tbsp)

Wash the lemon hot, pat dry and grate the zest. Squeeze out the juice. Combine walnuts, dates and coconut oil in a food processor and pulse until finely chopped. Mix this with the oats until crumbly. Set aside about 4 Tbsp of the mixture. Distribute the remaining crumbs into four wide‑mouth glass jars or dessert glasses. Whisk the quark with cream cheese and lemon zest until smooth. In a small pan lightly caramelise the honey. Add the lemon juice and stir until the caramel dissolves. Let the caramel cool slightly but remain liquid, then mix it with the quark mixture and pour into the jars. Chill for about an hour. Before serving sprinkle the remaining crumbs on top.
