Ingredients

  • 200 g yogurt (3.5% fat)
  • 600 g quark (20% fat, plain)
  • 50 ml Apple Juice
  • 2 apples (e.g., Braeburn)
  • 0.5 tsp cinnamon
  • 1 Vanilla bean
  • 125 ml heavy cream
  • 1 tsp Honey

Instructions

    Whisk the yogurt with quark and apple juice until creamy using a hand mixer. Then divide into four bowls and refrigerate.

    Wash or peel the apples, core them, and cut into small cubes. Place the apple cubes with 50 ml water in a pot and cook over medium heat for about 3–4 minutes to make a chunky compote. Stir in cinnamon.

    Meanwhile split the vanilla bean lengthwise and scrape out the seeds. Whip the cream with honey and vanilla seeds until stiff peaks form. Garnish the yogurt quark cream with apple compote and vanilla whipped cream.
